Agricole Selvi, Barberino Tavarnelle
Agricole Selvi was founded in 2006 and taken over by Andrea Falorni in 2012. The Falorni family has been passionately dedicated to winegrowing for four generations. Using state-of-the-art technology, professionalism, and many years of experience, the winery produces high-quality, accessible wines, including a Sangiovese “Governo all'uso Toscano.” This so-called “Governo process” refers to an old and traditional cellar technique from Tuscany, whereby the wine undergoes a second fermentation. After the harvest, part of the grape material is not used for immediate vinification, but is dried to achieve a higher extraction in the berries. This technique gives the wine a full-bodied, round, and smooth character. The origins of the “Governo process” date back to the Middle Ages. Today, this method is rarely used, making Falorni-Governo a true specialty.
