Weinlagerung

A great wine deserves the right rest: to let bottles mature over years, it pays to follow a few simple rules of storage.

Why storage decides the wine

Wine is a living product that keeps evolving in the bottle. Under the right conditions it gains complexity, harmony and depth – under the wrong ones it ages prematurely or loses its character. Four factors matter: temperature, light, humidity and position.

Temperature, light and humidity

The ideal is a constant 10 to 14 °C – more than the exact value, what counts is that the temperature barely fluctuates. Wine likes the dark: UV light ages it quickly. A humidity of around 70 per cent keeps the cork supple and tight. Keep odours and vibrations away.

The right bottle position

Lay bottles with natural cork on their side so the cork stays moist and sealed. Screw caps may stand upright. Store sparkling wines lying down or standing too, but always cool and away from light.

When is the right moment?

Not every wine benefits from ageing – most whites and light reds are best drunk young. Concentrated, tannic reds such as Barolo, Brunello and Amarone, however, need time. When in doubt: better to open a bottle a little too early than too late.
