The most famous sparkling region

North of Paris, Champagne is one of France's coolest wine regions. That coolness is its secret: it gives the base wines the high acidity that, after a second fermentation in the bottle, becomes elegant, long-lasting bubbles.

The méthode champenoise

True champagne is made exclusively by traditional bottle fermentation. Chardonnay, pinot noir and pinot meunier are mainly used. The long contact with the yeast gives the wine its characteristic aromas of brioche, almond and leaven. A blanc de blancs comes from chardonnay alone, while a rosé takes its colour from red wine or skin contact.
