The art of sweetness
Dessert wines arise when plenty of sugar remains in the grape. Several routes lead there: drying the grapes (passito), noble rot or stopping fermentation. The result is concentrated, often long-lived sweet wines.
Passito and Recioto
In the passito method, the grapes are dried on mats after harvest, concentrating sugar and aromas. In the Veneto this yields Recioto della Valpolicella, a sweet red. Muscat grapes also make fragrant sweet specialities.

Serving it right
Serve dessert wines well chilled, at 8 to 12 °C, in small glasses. Being concentrated, small amounts suffice – once opened they often keep for several weeks thanks to their sugar.
