Freshness above all

Sushi thrives on delicate, salty-umami flavours and the spice of soy sauce, ginger and wasabi. Powerful, tannic reds have no place here – crisp, dry whites or lively sparkling wine that refresh the palate are preferred.

White or sparkling?

Crisp whites such as sauvignon blanc or pinot grigio, with their lively acidity, are ideal partners. Sparkling wine often does even better: its bubbles and freshness cleanse the palate and pair beautifully with fatty fish such as salmon or tuna.

Light fish and maki pair with crisp white, fatty fish and tempura with sparkling. Beware of too much wasabi and soy – they overpower fine wines. A dry, fruity wine gives the best balance.
