Agricole Selvi was founded in 2006 and taken over by Andrea Falorni in 2012. The Falorni family has been passionately dedicated to winegrowing for four generations. With state-of-the-art technology, professionalism and many years of experience, the estate vinifies high-quality, accessible wines, including a Sangiovese “Governo all’uso Toscano”.
This so-called “Governo method” refers to an old and traditional cellar technique from Tuscany, through which the wine undergoes a second fermentation. After the harvest, part of the grape material is not used for immediate vinification, but is dried in order to achieve higher extraction in the berries. Through this technique, the wine gains fullness and becomes round and soft. The origins of the “Governo method” date back to the Middle Ages.
