The basic rules of pairing
Three rules of thumb help: first, whites often suit cheese better than reds, as their acidity harmonises with fat and salt. Second, what grows together goes together – regional pairs such as a lugana and a northern Italian cheese almost always work. Third, a powerful cheese calls for a powerful wine.
