Game meat is aromatic, dark and often well spiced. It calls for reds with depth, structure and ripe fruit that can stand up to the intensity. Delicate game suits more elegant wines, powerful cuts the truly great ones.
Venison, deer and wild boar
With fine venison, elegant, spicy reds such as a mature barolo or pinot noir harmonise. Deer and wild boar take more power – an amarone or sturdy syrah accompanies them ideally. The key: the wine must carry the sauces and sides too.
